Rolo Sugar Cookies
This last Wednesday my sister Jackie and I had a craft night. I went through all my craft inspiration and started making a list of the crafts I wanted to do and supplies I needed. Then I decided not to do any crafts and bake instead. I announced to the room, containing Jackie, her boyfriend Trey and my husband Jon, that I was making Rolo Sugar Cookies. Trey was instantly amazed and couldn’t wait, claiming Rolos are one of his favorite candies.
I had seen a recipe for Rolo Stuffed Snickerdoodles on Pintrest and bought the ingredients weeks ago. All I needed to do was put it together.
What you need:
- 1- package of sugar cookie dough and required ingredients
- 16-Rolo candies
First pre-heat the oven to 325 degrees. In a large bowl mix the cookie dough according to the package directions. Use a tablespoon to measure out the cookie dough. Roll one tablespoon of dough into a ball. Flatten the dough and insert a Rolo into the middle. Wrap the Rolo in the dough and reform into a ball. Place on cookie sheet with two inches of space between each cookie.
Bake for 14 minutes and cool. Cooling is an important step in this recipe. I love to eat cookies right out of the oven and this batch was no different. I soon learned that the caramel is molten lava hot and not very friendly to your mouth. I recommend waiting a bit until the caramel cools to prevent burns.
