Rocky Road Brownies
Lately I have craved sweets. I try not to keep sweets in the house because I am known to eat them all up in a mater of minutes. However, today I caved and made some brownies. We have family visiting so hopefully I can give most of them away and not have to feel food guilty. I found this brownie recipe on the Betty Crocker website.
What you need:
- 1 box brownie mix and ingredients called for on box
- 1 1/3 cups semi-sweet chocolate chips, divided
- 1 1/3 cups miniature marshmallows
- 3/4 cup chopped peanuts

Preheat your oven to 350°F, 325°F for dark or non-stick pan. Grease bottom of 9-inch square pan with cooking spray. Make brownie batter as directed on box–except stir in 2/3 cup of the chocolate chips. Spread in pan.
Bake brownies as directed. Immediately after removing from oven, sprinkle with 1 to 1 1/3 cups miniature marshmallows, remaining 2/3 cup chocolate chips and the peanuts. Cover pan with cookie sheet about 2 minutes. Cool completely, about 2 long miserable hours.
If you can’t wait the two hours of cooling time I recommend pulling some out early and serving with ice cream. You are going to need a cup of milk with the brownie anyways so might as well make it ice cream instead. If you are having day old brownies and they are completely cooled you can microwave a square for about 30 seconds and serve with ice cream. I hope you enjoy!
