Pot of Gold Chex Mix
Betty Crocker is amazing isn’t she?! My last few posts have been recipes from the Betty Crocker website and this one is too. If you read my last post on Luck Charm Treats you know I am a fan of Lucky Charms.
Do you ever eat Chex Mix and wish there was a slightly different flavor? I know Chex makes variety of flavors and the ready made packs are excellent when you are browsing the gas station isles. However, when we have time to make snacks, it is fun to be a little creative.
What you need:
- 4 cups Lucky Charms
- 2 cups Corn Chex
- 1 1/2 cups broken mini-pretzel sticks or twists
- 1 cup dry-roasted peanuts
- 1/2 cup packed brown sugar
- 1/4 cup butter
- 2 tablespoons corn syrup
- 1/8 teaspoon baking soda
- 1/4 cup green mini candy-coated milk chocolate candies (about 2 regular size M&M’s)
In a large micorowavable bowl (make sure it fits in the microwave) mix cereal, pretzels and peanuts together, set aside
In your 2 cup microwavable measuring cup mix together brown sugar, butter and corn syrup. Microwave on high for 2 minutes, stir every minute until smooth and melted. Remove from microwave and add baking soda, stir until dissolved. Pour over cereal and stir until evenly covered. Make sure to stir gently so you do not crush all the cereal.
Microwave on high for 2 minutes stiring every 30 seconds. Make sure to get all the cereal from sides of the bowl to make sure everything is covered. You are done microwaving when the cereal starts to brown. Cool for 5 minutes then add in the chocolate candies.
Spread mixture over waxed paper to cool for 30-60 minutes. Break the mix into bite size pieces. Store in airtight container.
Pot of Gold Chex Mix is pretty good. I used mint M&M’s because I didn’t want to pick through my big bag of M&ms for all the green ones. I heard you buy bags of one color M&M’s in stores but I haven’t seen them yet. I LOVE mint but I know not everyone does (my husband and roommate for example). Stick with plain M&M’s if you prefer.
