Mountain Dew Cupcakes
This week is family week, we have family visiting from Northern California, Idaho and Florida. We just got back from vacation ourselves so with limited time off work we have stayed up late to hang out with everyone. It has been a long sleep deprived week, but we couldn’t be happier. One evening we were all talking about food and my brother-in-law Jordan jokingly said I should make Mountain Dew cupcakes (his favorite soda). I took up his challenged and looked up recipes online. I found a very simple one on Nothing But Country and gave it a try.
What you need:
Cake
- 1 box lemon cake mix
- 1 box instant lemon pudding
- 4 eggs
- 1 1/4 cups Mountain Dew
- 1/2 cup vegetable oil
Pre-heat oven to 350 degrees and prepare cupcake tins with liners or grease.
Add cake mix, pudding and eggs in a large bowl, use mixer on low until blended. Add oil and mix again. Slowly add soda and mix for another minute, be careful of the carbonation in the soda.
Pour batter into cupcake tins about 2/3 full. Bake for 13-17 minutes or untill toothpick comes out clean.
Cool completely before frosting.
Frosting
- 4 cups powdered sugar
- 2 sticks butter (room temp)
- about 1/8 cups mountain dew
- 1 tablespoon lemon juice
Beat butter until smooth, slowly add sugar 1 cup at a time. Add lemon juice and mountain dew. Check frosting consistency and add teaspoon at a time of sugar to thicken or soda to thin. Frost away!
Mountain Dew flavor is in these little cakes! I was skeptical at first but everyone loved them. We hope you enjoy as well.
