Homemade Peanut Butter Cups

My sister is Vegan and my brother in-law is Gluten/Dairy free.  With such specific diets I keep an eye out for treats to make for them.  One day I came across a tutorial on Willow Would for Dairy & Soy Free Peanut Butter Cups! (Simply amazing).  I love sweets so it is nice to make some that I can enjoy with my sister and brother.

Today I made some of the peanut butter cups for my husband and I.  Neither of us are on diet restrictions so I made this batch with dairy.

 What you need:

  •  2 cups chocolate, melted
  • 1 cup smooth peanut butter

First place muffin liners in your mini muffin pan.  Spoon chocolate into liners to make the bottom layer.  Using a clean spoon to spoon peanut butter in the center of each cup.  Get a heaping spoonful of peanut butter and use a knife to separate smaller chunks of peanut butter.  Press the knife butter side down into the cups spreading out the chocolate around the butter.

(I hope this makes sense, it took me a few tries before I got the hang of it)

Use remaining chocolate to top with a thin layer. Place in the refrigerator until chocolate is set.

 

 

 

 

 

I made my cups before work (took 10 minutes) and had a yummy treat to come home to .  The possibilities are endless…  I think I will also try white chocolate!  Let me know if you try anything fun in the comments below.
