One of my husbands favorite holiday treats is the large tins filled with butter, cheese and caramel popcorn. I have only like the caramel side and grew up throwing the other two flavors in the trash. When we started dating he would rave about popcorn tins and I soon realized I was dating a popcorn tin fanatic, now we are married and his love hasn’t ceased. Well it’s that of the time for tins again, but before we buy one this year I wanted to try to make my own flavored popcorn. Of course I am only making the caramel.
I found this recipe on make it and love it. This serves four, so if only two people are eating I recommend splitting the recipe.
What you need:
- 2 1/4 cup Brown Sugar
- 1 cup Corn Syrup
- 1 cup Butter (two sticks)
- 1/2 teaspoon Salt (unless your popcorn is pre-salted)
- 1 can Sweetened Condensed Milk
- 1 teaspoon Vanilla
- 2 large bowls of Popped Popcorn
Pop two bags of microwave popcorn or if you use an alternative popcorn method have about two large bowls. Make sure you remove all the un-popped kernels from the bowls. Once you add the caramel they will stick to the good kernels.
Stir in milk and vanilla. Return to heat and stir until it starts to lightly boiling again. Remove and drizzle over popcorn. Stir well, to completely coat the popcorn.
Wait until the popcorn cools for the caramel to set. If you eat it early be sure to have plenty of napkins available!
