Grilled Potato Wedges

My dad recently bought a new grill for the backyard and my parents have had some meal cooked on it once or twice a week so far.  This post comes from my mom, a creative idea she had on how to grill potatoes on the new grill.  She was excited to create her own post and write down her recipe, so I hope you enjoy it!

(This serves 2)

What you will need: 

  • 2 large russet potatoes
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon paprika
  • 1 large sheet heavy duty foil

Rinse potatoes and scrub with a brush.  Prick several times with fork to allow steam to escape.  Microwave potatoes on high for 5 minutes; turn over and microwave for 5 addition minutes.

 

 

 

Carefully remove potatoes from microwave with an oven mitt, and cut into wedges leaving the skin on.

 

 

 

 

Spread out foil on counter.  Cut 1 tablespoon butter and scatter on foil. Add potato wedges on top of butter and sprinkle with herbs. Cut remaining butter and place on top of potatoes.

 

 

 

Bring sides of foil in the center and roll 2 or 3 times.  Fold in sides to create a pocket.

 

 

 

 

Heat grill to medium heat of 300 – 350 degrees.  Put foil pocket on grill to cook for 10 minutes.  Turn pocket over using a hot pad and cook for an addition 10 minutes.

 

 

Remove from heat and open foil pocket carefully since the foil will be hot.  Enjoy with other BBQ’d dishes!
