Grasshopper Ice Cream Cake
Summer is here which means… ice cream stores are open later! I love ice cream no matter what season but it is especially nice after a hot day. This weekend my husband and I invited some friends over to help us with yard work. As a thank you I made an ice cream cake to enjoy after our work was done. I have to say, knowing an ice cream cake is waiting for you makes yard work much easier.

What you need:
- 28 Oreo cookies divided
- 1 1/2 quarts mint chocolate chip ice cream, softened
- 1 tub cool whip
- 1 square semi sweet chocolate, grated
Line a 13×9 inch pan with foil. Make sure some foil hangs over the sides, this makes it easier to get the cake out after freezing. Place 20 cookies in a ziplock bag, using a rolling-pin roll over cookies until crushed. Spread crumbs in the bottom of the prepared pan.
Spread ice cream evenly over Cookies. Top with cool whip and grated chocolate.
Freeze 3 hours. Remove from freezer 10 minutes before serving. Lift cake from pan using excess foil, cut into squares and place remaining cookies as toppings.
Possibilities for this dessert are endless, you can use any ice cream flavor you like.
