Funfetti Rice Crispies
As you can probably tell I am a HUGE fan of sweets. I was browsing some blogs and found a recipe for cake batter rice crispy treats. Let me just say Ali’s blog is filled with wonderful recipes, be sure to visit.
The original recipe calls for yellow cake mix but Funfetti is my favorite cake flavor so I made a small change. Feel free to use either cake mix. (Chocolate might be interesting too, let me know if you try this)
What you need:
- 3 teaspoons butter
- 10 oz marshmallows, one bag
- 1/3 cup cake mix, dry
- 6 cups rice crispy cereal
- 3 1/2 tablespoons sprinkles, divided
First melt butter and mallows in a large pot over med-low heat. Once melted add cake mix a bit at a time until all is mixed in, making sure to mix evenly. Add cereal and half of the sprinkles (funfetti already has a sprinkles in the powder, I used less than half at this step). Mix gently until mallow mixture evenly coats the cereal.
Spray a baking dish with a light coat of cooking spray. Cereal mixture into prepared pan and let sit for 30 minutes or until cool.
A little secret my mom shared with me when I was younger is to also spray your spatula with a little cooking spray to keep the crispies from sticking while you are pressing it into the pan. This makes the mess on the left avoidable.
Funfetti Rice Crispies turned out to be pretty yummy and I ate almost half of the pan by myself (whoops). I really shouldn’t bake when no one else is around to eat it with me…
