Cinnamon Sugar Donut Bites

Since I became vegan my number one food I miss is donuts.  They are so mouth-watering and full of sugar and I crave them all the time.  I saw a photo of donut bits  that would be perfect for breakfast on pintrest, and followed it to this blog Oh My Sugar High. This blog has some really great recipes, I suggest checking it out for more ideas on sweets. To make these vegan I simply just used soymilk, dairy free butter, and no shortening.

What you will need:

  • 1 1/3 Cups flour
  • 1 Cup crisp rice cereal, coarsely crushed
  • 2 Tablespoons and 1/2 cup sugar, divided
  • 3 Teaspoons baking powder
  • 1 pinch salt
  • 1/4 Cup butter, not melted
  • 1/2 Cup milk
  • 1 Teaspoon vanilla
  • 1 Teaspoon ground cinnamon
  • 1/2 Teaspoon nutmeg
  • 1/4 Cup butter, melted

Preheat oven to 425 degrees. Crush rice cereal.  I used a meat tenderizer and just crushed the cereal in my measuring cup. In a bowl mix flour, crushed cereal, 2 tablespoons sugar, baking powder and salt. Cream ¼ cup of non melted butter until mixture forms crumbles. Pour in milk and vanilla. Stir until mixed and form a dough. Melt ¼ cup butter.

 

In a different bowl mix cinnamon, nutmeg, and ½ cup sugar until evenly mixed. (I had to make this twice because I ran out of sugar to dip the balls in.  I don’t know if you would have the same problem but make sure to keep that in mind)

Roll a ball of dough, about an inch or so. Dip ball of dough in melted butter and twirl it until completely covered.

 

 

 

Take ball out of dough and dip in cinnamon sugar mixture.  I found that it was easier to swirl the bowl with dough inside.  This way the ball is evenly covered and it helps to form a ball shape.

 

 

 

Remove dough ball and place in a greased pan.

 

 

 

 

 I had a nice set up that made this pretty easy to get done quickly. When you have finished making balls with all your dough, cook at 425 degrees for 15 minutes.  They are done when you can insert a knife or toothpick and pull it out clean.  If they are not done after 15 minutes, cook for an extra 2 minutes and test again.  Repeat this until they are cooked.  Take out of oven and allow to cool before eating.
