Many Betty’s may find their way into my life, three will always be my favs; Betty White, Betty Harbert (my beloved grandmother) and Betty Crocker. Betty Crocker was wise to make so many Chex Mix recipes! I think I like them so much because I have myself convinced Chex Mix is a healthy snack (please don’t tell me otherwise… I would be devastated). I love cereal and Chex mix is an excellent way to eat cereal any time of the day. Of course covered with sugary and sweet coatings, this recipe adapted from Honey Nutty Chex Mix is just that.
What you Need:
- 4 cups Corn Chex cereal
- 4 cups Rice Chex cereal
- 2 cups Honey Nut Cheerios cereal
- 1/2 cup roasted peanuts
- 1/4 cup butter or margarine
- 1/4 cup honey
- 1 cup pastel-colored M&M’s
- 1/2 cup powdered sugar
In large microwavable bowl, mix cereals and peanuts. Make sure the bowl fits in the microwave.
In 2-cup microwavable measuring cup, microwave butter and honey uncovered on High 1 to 2 minutes, stirring every 30 seconds, until mixture comes to a full boil and butter is melted. If using a measuring spoon for the honey spray the spoon with cooking spray before adding honey and it will come out easier.
Spread on parchment paper cool for about one hour add candies and mix in.
If desired add mix to a gallon freezer bag with 1/2 cup powder sugar and toss until evenly coated. The powdered sugar absorbs the stickiness of the honey and keeps saves your fingers from getting too sticky. As always store in airtight container.
