Crunchy Peanut Butter Mix

Every one loves Peanut butter.  I grew up with PB&J sandwiches; in fact I still make them for lunch for my husband and I.  My husband loves peanuts more than anyone I know, he could live on Penuttles and Reese’s Pieces.  While browsing Betty Crocker‘s site I found a Chex Mix that sounded perfect for him Crunchy Peanut Butter Mix .

what you need:

  • 4 cups Golden Grahams cereal
  • 2 cups Cocoa Puffs cereal
  • 2 cups thin pretzel sticks
  • 1 cup Reese’s Pieces
  • 1 cup dry-roasted peanuts
  • 10 oz white chocolate chips
  • 2 tablespoons butter
  • 1/2 cup powdered sugar

In a large microwavable bowl (make sure it fits in the microwave) mix cereals, pretzels, peanut butter candies and peanuts; set aside.

In a smaller 1-quart microwavable bowl, microwave white chocolate and butter according to the white chocolate package instructions.  Be careful not to burn the white chocolate because it can happen quickly.  I experienced this last Christmas and was pretty bummed out.  Betty Crocker suggests cooking until the chocolate is smooth.  Mine didn’t get smooth, maybe cause of my fear of burning I stopped prematurely.  My white chocolate was still clumpy and worked great.  Maybe even better per my husband. Once you get the chocolate how you want it pour over cereal mixture, stirring until evenly coated.



I recommend stirring with your hands.  My chocolate was clumpy so I used my hands to break up clumps and mix around.  Some of the chocolate naturally formed over other pieces and made white chocolate clumps with nuts or cereal or Reese’s Pieces inside.  Those pieces were my husbands favorite.

Last, in a gallon sealable plastic bag, toss half of the cereal mixture with 1/4 cup of the powdered sugar until evenly coated. Spread on waxed paper to cool. Repeat with remaining cereal mixture and remaining 1/4 cup powdered sugar. Store tightly covered at room temperature.



My husband took the Chex Mix on a camping trip with some friends and they all loved it.  I even have orders to make more.  Let me know if you love it as much as they did!
